Raspberry Wheat Beer

 

Ingredients

 

*6.6 lbs. Plain Wheat Malt Extract

*1 lb. Plain Wheat DME--55% Wheat/45% Barley

*1 oz. Hallertau Bittering Hops 4.o% AAU (add to beginning of 60 minute boil)

*1/2 oz. Hallertau Finishing Hops 4.2% AAU (add to last 5 minutes of boil)

*11 g Nottingham Brewing Yeast

*36 oz. Frozen Red Rasperries

 

 

Put frozen fruit in a pot, and add water to cover. Bring the temp to 160 deg.

and let them sit for 20 minutes to pasteurize them. Cool to 70 deg. and pour into a

hopsock, catching all of the liquid in a sanitized bowl. Tie off hopsock, add juice to

the primary, syphon in the wort. Add two gal. of water. Pitch the yeast and drop in the

raspberries. I'm told this could be a volatile fermentation. Keep your bucket or carboy

somewhere safe-i.e. an unused bathtub!
